Chocolate chip cookies with cranberry & pistachios
- Plain flour 255 g
- Salt 5 g
- Baking soda 5 g
- Unsalted butter 150 g
- Brown sugar 100 g
- Sugar 55 g
- Corn syrup 3 1/4 tbsp
- Milk 2tbsp
- Vanilla essense 3/4 tbsp
- Bittersweet chocolate chips 200 g
- Pistachio nuts 100 g
- Dried cranberries 85 g
Step 1: Preheat oven 180 deg C. Sift flour, salt & baking soda into a mixing bowl. Set aside.
Step 2: Place butter and sugar in another mixing bowl and whisk unitl light and fluffy. Add corn syrup, milk and vanilla essense and whisk until well blended.
Step 3: Add flour mixture and mix on low speed until smooth. Add chocolate chips, pistachio nuts and dried cranberries. Place mixture on a floured work surface and knead to form a dough. Divide dough into 1 inch balls and flatten into discs.
Step 4: Arrange on a lined baking tray about 2.5cm apart and bake for 15-20 mins until light golden brown. Set aside to cool and store in an airtight container.
