Broccoli and Pistachios Pesto from Bronte

Broccoli and Pistachios Pesto

1 cup of Broccoli
20 grams of Basil, fresh leaves
1 tablespoon of Pistachio nuts
1 pinch of Parmigiano Reggiano, grated
1 pinch of Table salt
1 tablespoon of Lemon juice
2 Garlic clove, chopped
50 grams of Extra virgin olive oil (EVO)

Place the pistachios in a pan and let it boil until slightly toasted.

Grind the broccoli and basil leaves in a food processor or blender and pulse until chopped.

Add the nuts and grind some more. Add Parmesan cheese, salt, lemon juice, garlic and olive oil and grind everything until you get a smooth and creamy.

120 grams of Butter, softened

175 grams of Sugar, white
2 Egg, room temperature
100 grams of Greek yogurt
150 grams of Pistachio nuts, shelled
125 grams of White wheat all-purpose flour
125 grams of Cornstarch
2 teaspoons of Natural vanilla extract

Pistachio from Bronte Mint Crusted Rack of Lamb

6 servings
Ingredients:
2 Racks of lamb, 8 bone each, trimmed and frenched
Kosher salt and black pepper
3 tablespoons Olive oil, use divided
½ cup Shelled, roasted, salted pistachios
3 cups Mint leaves, loosely packed
3 cloves Garlic, minced

Banana bread: it's raining cats and dogs!

 

BANANA BREAD_ English version
(from Betty's Crocker Cookbook - bridal edition)

Ingredients:

1 1/4 cups sugar
1/2 cup softened butter
1/2 cup buttermilk
2 eggs
1 1/2 cups mashed very ripe bananas (3 medium)
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts

Heat hoven to 350°. Mix sugar and butter in large bowl. Stir in eggs until well blended. Stir in bananas, buttermilk and vanilla; beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Bake 8-inch loaves about 1 hour. Cool completely, about 2 hours, before slicing.
